Easy Salad Recipes for Lunch

One of my goals this year is to start eating better for every meal. The meal that I always find this hardest with is lunch. It's so easy to eat unhealthy while at work during the day. My work constantly has pizza, sandwiches, chips, sodas, and candy up for grabs. This week, I made it a goal to make "gourmet" salads for lunch every day. When I went grocery shopping, I was very intentional about buying specific ingredients to dress up my salads to not be so boring and basic. I've really enjoyed the three salads that I made this week and wanted to share my recipes with you all! I hope you try them and enjoy them as much as I am!

FarmHouse Salad

  • mixed greens
  • green onion
  • green pepper
  • red onion
  • mushrooms
  • grape tomatoes
  • hard boiled egg
  • cucumbers
  • diced baked chicken (seasoned with herbs)
  • white balsamic vinegar

Fresh Berry Salad

  • mixed greens
  • raspberries
  • blackberries
  • blueberries
  • honey almond granola
  • white balsamic vinegar

Taco Salad

  • mixed greens
  • ground beef (seasoned with taco spices)
  • canned corn
  • black or pinto beans
  • fresh lime juice
  • shredded cheese (three cheese blend)
  • green onion
  • red onion
  • bell pepper
  • grape tomatoes
  • avocado
