Baked Oatmeal

This is one of my all-time favorite recipes to make for overnight guests. It’s quick to whip together in the morning and is so cozy-yummy. My mom got this recipe over 20 years ago from a church cookbook. She used to make this before my volleyball tournaments as a teenager so that I had energy to play well. Every time I make this recipe, I’m reminded of those good times playing volleyball, and also all the wonderful guests I’ve made it for.

Ingredients:

  • 1/2 cup canola oil

  • 1 cup sugar

  • 2 eggs

  • 3 cups quick oats (uncooked)

  • 2 tsp. baking powder

  • 1 cup milk

  • 1 tsp. cinnamon

  • You can add fruit if you wish like apple or banana, I don’t personally

Instructions:

  1. Mix oil, sugar, and eggs in a large mixing bowl with a whisk.

  2. Add quick oats, baking powder, and milk. Mix thoroughly.

  3. Pour into a lightly greased 9-inch pan.

  4. Bake in a 350-degree oven for 30 minutes.

  5. Enjoy it warm! I prefer it “dry,” but some people like to add milk to it.
