Chicken Enchiladas

I love making this recipe. It’s super easy and is a great option for when you are hosting guests. It’s also a recipe that you can customize to your taste/spice preferences and make your own.

Ingredients:

  • Chicken breasts (you can make this with ground beef/chicken/turkey or shredded pork too)

  • Jar of salsa

  • Taco seasoning to taste

  • Diced green chiles

  • Cilantro

  • Jalapeños

  • Soft tortilla shells

  • Shredded Mexican cheese

  • Green or red chili sauce

    Optional:

  • Cream of chicken soup

  • Sour cream

  • Guacamole

Instructions:

  1. In a crock pot, add your chicken breasts, a jar of your favorite salsa, and taco seasonings. Mix together and cook on low until the chicken can be easily shredded with some forks or a hand mixer. (If you cook on low, it’ll be 4-6 hours, high 2-4 hours).

  2. If you like your enchiladas to be creamier, you can add some cream of chicken soup and sour cream to the shredded chicken and mix it all together. You may want to add more taco seasoning if you do this.

  3. Preheat oven to 400°F.

  4. Once the chicken is all shredded and to your liking, lay out a burrito shell. Scoop some of the meat and put it down the middle of the tortilla shell.

  5. Add some shredded Mexican cheese on top and roll the tortilla. Place the rolled tortilla into a baking dish that has been sprayed with cooking spray so that it doesn’t stick.

  6. Continue stuffing and rolling the tortilla shells until your baking dish is full. I can usually put about 8 in a baking dish.

  7. Once your baking dish is full, add your favorite enchilada sauce on top. I prefer green enchilada sauce. Add more Mexican shredded cheese on top and make sure all the tortillas are covered.

  8. Customize your dish by adding some fresh cilantro or diced fresh jalapeños on top

  9. Place aluminum foil on top of the baking dish and put in the oven for about 20 minutes. After 20 minutes, take the foil off and cook for an additional 10 minutes.

  10. Remove from oven when the cheese is bubbling and starting to get a little brown.

  11. Serve with some fresh guacamole, black beans, or your favorite Mexican sides.

The leftovers are my favorite part. This is a great meal to make when you know you are going to have a busy week.
